Over the Top Pork Roast

This is the recipe we use for our pork roast samples at Farmers Markets and other events. The people love it and so will you!

What you need:

How to cook:

  1. Using Spark Spices Over The Top Rub, coat all exposed meat, rubbing spice into meat.
  2. Place in crock pot.
  3. Do not add any liquid as, during the cooking process, liquid will develop.
  4. Cook on low for 8-10 hours.
  5. The meat will be tender enough to pull apart in the crock pot with two forks. The meat will also absorb the liquid from cooking, but if it looks a little dry, add a quarter stick of butter!

Over the Top Pork Chop

Are you looking for a delicious pork chop recipe? Here it is. We have been using these as samples at some of our farmers market stops and people have been raving about them.

What you need:

  • 2 Large Pork Chops (bone in or out)
  • 1/2 Tbsp. olive oil
  • 1 Tbsp. Spark Spices Over the Top Rub

How to cook:

  1. Preheat oven to 375°
  2. Coat pork chops lightly with oil and rub spice over all meat surfaces
  3. Place on a nonstick baking sheet or a baking dish
  4. Bake at 375° until they have a 145°-160° internal temperature
  5. Remove from oven, let rest for 5 minutes

Mmm Memorial Day Slow Cooked Country Ribs

In addition to taking some time to reflect on the reason for the holiday, we enjoy some pretty darn good food. We like to dine on some potato salad, Mom’s incredible homemade baked beans, and Dad’s Slow Cooked Country Ribs (which end up being more like pulled pork because the bones literally fell out of the meat). As the summer months bring on more family get-togethers, you really need to try these. Here is the recipe.

What you need:

  • 5 lbs. country style ribs
  • 2 cups water
  • 1/2 cup Optional barbecue sauce (we used Sweet Baby Ray’s Maple and Brown Sugar)
  • 4TBS Spark Spices Original Brine

How to cook:

  1. Place meat in 1 gallon zip top bag (Tip- position bones to the inside so the don’t puncture the bag.)
  2. Add the 4 tablespoons of original brine mix to the 2 cups of water and mix thoroughly.
  3. Add to the 1 gallon zip top bag poured over the meat.
  4. Squeeze out all air out of the bag until the liquid is over the top of the meat and seal.
  5. Refrigerate for up to three days, but at least 24 hours.
  6. Turn bag the bag every 24 hours or so to allow for better coverage of the brine.
  7. Place meat in the slow cooker and cook on low for 6 to 8 hours. (You can also smoke the ribs for 2 or so hours before placing in the slow cooker.)
  8. Once they smell amazing, pull ribs out carefully and remove most of the liquid from the slow cooker.
  9. After the liquid is removed, add ribs back to cooker and add barbecue sauce (or not, your choice), and set cooker to warm, and the ribs are ready to serve.

Holiday Prime Rib

This is our New Year’s Eve dinner! Mike has been making it this way for years and it wows everytime. Try it for yourself!

What you need:

How to cook:

  1. Preheat oven to 425. Coat rib roast with olive oil.
  2. Generously apply rub to roast, until all meat surfaces have visible spice.
  3. Put roast in pan, bone side down, and roast for 20 minutes.
  4. After 20 minutes, turn oven down to 350 and cook for 1 1/2-2 hours for medium rare.
  5. Temperature in center of roast should be 130 degrees.
  6. Let roast sit for 20 minutes before cutting.
